Shrimp and Preserved Vegetable Congee

【Ingredients】
250g Fresh Shrimp
2 Abalone
1 Squid
100g Rice
500ml Water
10g Shredded Ginger
10g Cooking Oil
White Pepper Powder (to taste)
15g Preserved Shrimps and Vegetables
10g Celery
【Cooking Steps】
1.Remove the heads, veins, and stomachs of the shrimp, but keep the heads for later use. Score the abalone and prepare shredded ginger.
2.Heat oil in a clay pot. Add shrimp heads and shredded ginger, stir-frying until fragrant to remove any fishy smell. Once the shrimp aroma develops, add water.
3.When the water comes to a boil, remove the shrimp heads and add pre-soaked rice. Stir and begin simmering the congee.
4.When the congee is nearly done, add the abalone, fresh shrimp, and squid. Season with white pepper powder and preserved shrimps and vegetables.
5.Once the rice is fully cooked and softened, add celery. Serve hot and enjoy
