Hand-pulled Chicken with Scallion Oil

【Ingredients】
2 chicken legs
1 tied scallion (scallion knot)
4 slices ginger
1 tbsp fermented black beans
A dash of soy sauce
2 tbsp scallion oil
A small handful of celery
【Cooking Steps】
1.Blanch the chicken legs in boiling water with scallions and ginger to remove any gamy taste. Cover and cook until fully done, about a few minutes.
2.Remove the chicken and place it in ice water, then shred it into bite-sized pieces.
3.In a bowl, mix fermented black beans, soy sauce, and scallion oil until well combined.
4.Pour the sauce over the shredded chicken, mix well, and plate. Garnish with celery before serving.
