Fish Head Soup with Napa Cabbage

【Ingredients】
1 head of Chinese cabbage(Napa Cabbage)
1 "Fan Yu" fish head
A little old ginger
A handful of peppercorns
A handful of cilantro
A little Cho Teng (fish sauce)
A little white pepper powder

【Cooking Steps】
1.Blanch the fish head: place in cold water with the skin side down. Once the water boils, turn off the heat and flip the fish.
2.Remove the fish head, let it cool for a moment, then rinse it under water.
3.Cut the cabbage into 4 parts, set aside. Slice the ginger and crush the peppercorns, set aside.
4.Cut the fish head into smaller pieces, then marinate with ginger slices and a little white wine for a while.
5.Heat a pan, add the fish head skin-side down, and add an appropriate amount of oil. Flip and fry until golden brown. Add a little white wine, ginger slices, and peppercorns.
6.Pour in boiling water, transfer to a clay pot to simmer. Add the cabbage and peppercorns, cook for 15 minutes, then add cilantro and Cho Teng (fish sauce), and it's ready.
