Eel in Salted and Sour Plum Casserole

1 Eel
2 Garlic Cloves
2 Chilies
1 Piece of Ginger
5 Salted Sour Plums
Cooking Wine (to taste)
Chicken Powder (to taste)
Shaoxing Wine (to taste)
Chopped Celery (to taste)
1 Basil Leaf
【Cooking Steps】
1.Cut the eel into pieces and place in a bowl. Slice the ginger, crush the garlic, and combine with chilies and chicken powder to marinate the eel.
2.Add the crushed salted sour plums and cooking wine to the eel, mix well.
3.Heat oil in a pan. Sauté the garlic until fragrant, then remove and place it at the bottom of a clay pot.
4.Clean the marinated eel and pan-fry until golden brown on both sides, then place it on top of the garlic in the clay pot.
5.Mince the ginger, then mix it with chopped chilies and salted sour plums.
6.Continue heating the eel and evenly drizzle the salted sour plum sauce over it. Sprinkle with chopped celery and cover the pot. Add Shaoxing wine and simmer for 10 minutes.
7.After uncovering, place a basil leaf on top for added flavor and decoration, and it’s ready to serve!
