Bitter Gourd Casserole with Black Bean

75g Pork
150g Bitter Melon
30g Shiitake Mushrooms
20g Dried Shrimp
30g Garlic
25g Fermented Soybean Paste with Ginger
5g Fish Sauce
100g Water

【Cooking Steps】
1.Heat a pan with a small amount of oil and render the pork fat. Add garlic and stir-fry until fragrant.
2.Add bitter melon and shiitake mushrooms, stir-fry until the bitter melon turns bright green.
3.Add dried shrimp and fermented soybean paste, stir-fry until fragrant.
4.Add water and simmer over medium-low heat for 20 minutes.
5.Finally, season with fish sauce and white pepper before serving.
