Marinated Blood Clams

【Ingredients】
500g blood clams
1 small bunch of celery
1 whole garlic bulb
2 chili peppers
A little white sugar
A little sesame oil
A little Cho Teng (fish sauce)
1 tablespoon of soy sauce

【Cooking Steps】
1.Use a toothbrush to clean each blood clam individually, then place them in a bowl and set aside.
2.Mince the garlic, chili peppers, and celery, and set aside. Add Cho Teng (fish sauce), white sugar, soy sauce, sesame oil, and aged rice vinegar, then stir to combine.
3.Bring a pot of water to a boil, then add the blood clams. After 15 seconds, immediately turn off the heat and remove the clams.
4.Drain the water, then open each clam. Pour the "soul" raw marinade over the clams and serve.
