White Cut Chicken

【Ingredients】
1 chicken
A little chopped green onion
A little dried shrimp
2 scallops
A little ginger
30ml Cho Teng (fish sauce)

【Cooking Steps】
1.Cut the green onion into sections, and slice the ginger, set aside. Heat oil in a pan, add green onion sections, dried shrimp, scallops, and ginger to sauté until fragrant.
2.Pour the sautéed ingredients into a soup pot, add a pinch of salt, and 30ml Chou-Tang (fish sauce), bring to a boil and cook for 10 minutes.
3.Add the small chicken, gently immerse it in the soup three times to tighten the skin. Pour the broth over the chicken to ensure even heating, then simmer on low heat for 15 minutes.
4.Remove the chicken and soak it in cold water for 10 minutes. Then, cut the chicken into pieces and plate it.
