Stewed Duck with Salted Lemon

【Ingredients】

1 aged duck
2 salted lemons
A small amount of chopped celery
2 slices old ginger
10 whole peppercorns
An appropriate amount of salt

【Cooking Steps】
1.Clean the duck thoroughly, cut it into pieces, and trim off excess fat.
2.Bring a pot of water to a boil, add the duck pieces and ginger slices, and blanch until partially cooked.
3.Remove the duck, rinse it well, then transfer it to a clay pot with 2 liters of water. Bring to a boil, then simmer over low heat for 30 minutes.
4.Remove the seeds from the salted lemons and add them to the soup along with salt. Simmer for another 5 minutes. Finally, add chopped celery and ground pepper before serving.
