Salted Lemon Old Duck Soup

【Ingredients】
Half a mature duck
Sliced ginger (as needed)
1 preserved salted lemon
Water (as needed)
Chopped celery (as needed)

【Cooking Steps】
1.Clean the duck, place it in a pot with cold water, add ginger slices, and blanch over high heat for 10 minutes.
2.Cut the salted lemon in half, remove the pulp and seeds to reduce bitterness.
3.In a clay pot, add water and the blanched duck. Cover and simmer over medium heat for 30 minutes.
4.Add the salted lemon, cover, and continue simmering for another 10 minutes. Uncover, sprinkle with chopped celery, and it’s ready to serve.
